Love this! That instinct to return to childhood comfort foods when sick is so real. The dashi broth element is underrated too becuase it adds that savory depth without being heavy. Made a similar custard once with miso and it had that sam effect of being light but deeply satisfying.
speedy recovery! was introduced to a warming food: Samahan tea, a ginger powder plus many other spices. seemed to help in warding off the flu (early stages) or hastening recovery (if u already have the flu). but chawanmushi tastes better.
i love chawanmushi
It's easy to love! :-)

Yes it's amazing how much flavour that little bit of dashi powder imparts! Miso egg custard sounds delicious!
I'm not sick but I want to eat this right now
It's very comforting and delicious, you should try it!
Feel better and get better soon! And thanks for this recipe! I haven't made steamed egg in such a long time, and I'd never thought to add sake.
Thanks Chris!! The seasonings are so simple but make a big difference. You can also use clear glutinous rice wine!

A few gingko nuts would make an excellent addition.
I definitely agree! :-)
