This is a rather involved recipe consisting of four main components: maltose, shallot oil, filling and the dough. Homemade maltose is not absolutely necessary, but it does add a lot more flavour and creates a more gooey experience. As store-bought maltose is firmer, the resulting filling would be more chewy. You can compare the consistency of heong piah filling made with commercial maltose (the two photos below) vs homemade maltose (top).
