There are many chicken rice recipes on the web, but many of them fall short of the Singaporean hawker centre experience of chicken rice. This recipe is the culmination of years of tweaking and is something that hits the spot for both Wex (a chicken rice rice lover) and I (a chicken rice chicken lover). It comprises of six parts: chicken stock, chicken, rice, chilli sauce, dressing and assembly. While some hawker stalls serve a ginger sauce as well, I don’t find it necessary because my chilli sauce is heavy on the ginger.
